Oven baked chicken thighs with potatoes, peppers and tomatoes

Chicken is one of the meat types you can do a lot with, one of the things I like most about cooking is to make it easy. Especially when you have a busy schedule and still want to serve something good for your family for dinner. And this is one of the dishes I like very good to make, it’s simple, you add everything in an oven shape, so there won’t be much washing either.

You spend about 1 hour and 30 minutes on this dish, as the food should be cooked in the oven for a little more than 1 hour.

You need:

  • 5 chicken thighs
  • 1 kg / 2 pounds of potatoes
  • 1 red bell pepper
  • 250 grams / 8.8 oz cherry tomatoes
  • butter
  • sea ​​salt
  • parsley seasoning
  • mint leaves

Here’s what you do:

Begin by washing the potatoes, then divide them in half. Add them in an ovenproof dish, finely chop the paprika and add the cherry tomatoes. Then add some butter and add spices. Over the potatoes I add sea salt, parsley spices and mint mix.
Put the chicken thighs over the potatoes, add spices you may wish. I have added paprika, mixed food spices and chicken spices.

Bake in the middle of the oven for just over an hour at 200 ° C / 392 ° F.
