Love this pear and apricot recipe here. It is light and heavenly to eat. You mix the cake batter into a delicious cake batter quite quickly, and it’s not a recipe you spend a lot of time on.
I spend about 60 minutes on this delicious cake here.
- 3 eggs
- 2,3 deciliters / 1 cup sugar
- 3,5 deciliters / 1 1/2 cup flour
- 1 teaspoon of baking powder
- 1 teaspoon vanilla sugar
- 1 teaspoon ground cardamom
- 175 grams / 6,1 oz melted butter
- 850 grams / 29,9 oz peeled and finely cut pears
- 850 grams / 29,9 oz peeled and finely chopped apricots
- 2 tablespoons of sugar
- 1 tablespoon cinnamon
- 2,3 deciliters / 1 cup of water
Here’s what you do:
Melt the butter, while the butter melts, crack the eggs in a bowl, add sugar, flour, baking powder, vanilla sugar and cardamom. Once the butter has melted, add the butter in the bowl and stir everything gently together. Pour the tube into a greased spring mold (24 cm in diameter).
Peel the pears and apricots and divide them into smaller pieces.
Put the pear and apricot pieces in a boiler, add water, sugar and cinnamon and cook the fruit barely tender. Let the fruit cool.
Then strain the fruit, take care of the juice, you need it afterwards.
Put the fruit over the cake. Fry the cake at 175 ° C / 347 ° Fahrenheit for approx. 45 minutes.
Drizzle some of the juice over the cake as it cools.
The cake can be served with ice cream as you wish.
