Steak is something my husband and I love on the weekends, there is more of a nice dinner after the kids have gone to bed. A romantic dinner when we want to enjoy ourselves with good food.
I spend just over 60 minutes on this dish
- 4 pieces of beef of beef fillet, 200 gram/ 7.0 oz
- 2 tablespoons butter for roasting
- 1 teaspoon salt
- 1 teaspoon pepper mix
- 2 tablespoons butter
- 2 finely chopped shallots
- 1 teaspoon green peppercorns
- 1 teaspoon of rose pepper
- 3 deciliter/ 1.2 cup broth/force
- 3 deciliter/ 1.2 cup whipping cream
- ¼ tsp salt
- 1 tablespoon butter for roasting
- 1 kg/ 2.2 pounds of potatoes
- 4 stalks of fresh thyme
This is how you do it:
For best results, place the meat at room temperature for a minimum of 1 hour before using it.
Start with the potatoes first.
Wash the potatoes well and divide into thick slices. Put them in a bowl and have oil in the bowl.
Sprinkle with salt, herbs and paprika powder. Mix well.
Have the potato chips in a long pan covered with baking paper.
Fry the potatoes at 225 ° C/ 437 ° Fahrenheit for 20-30 minutes. Use a pointed knife to see if the potatoes are tender. Use warm air for the last 5 minutes. Then the potatoes get a crisp and golden crust.
Then make pepper sauce.
Crush rosé and green pepper in a mortar or put them in a bag and tap the bag a little. Melt the butter in a small saucepan and fry the onion in the butter until it is golden, put in the crushed peppercorns and fry for a few more minutes. Pour into force or broth, and cream. Boil and let the sauce boil until it thickens a little.
Season with salt, or a little more pepper if you don’t think it is strong enough. Add a few drops of sugar candy if you want a darker color on your sauce. Add a little more force or cream if the sauce is too thick.
Boil a kettle with water and some salt. Add the asparagus and cook until tender, but still have a little chew, about 5 minutes.
The steak is cooked when the potatoes are almost finished. Season the steaks with salt and pepper. Fry them in a hot frying pan with butter, until the meat juice is piped to the top, 2-3 minutes. Turn the steaks and fry until the pink meat juices pop out on the other side. The steaks are now medium fried.
Add the steaks to rest.
