Bean soup is one of my husband’s favorite dish. Is one of the dishes I love to make either on a rainy weather day or a gloomy winter day. Or you just make it when you feel like it.
When you make my recipe for bean soup you have to calculate that you use about 2 hours on slow cooking.
- 450 grams/ 15.8 oz of white beans
- 2 liters/ 8.4 cup of water (add more as needed)
- 2 spring onions
- half a paprika
- a pinch of chilli
- 2 tablespoons of vegeta
- 1 tablespoon red pepper powder
This is how you do it:
You take 450 grams/ 15,8 oz of beans and put them in a kettle, clean them with water, before adding 2 liters/ 8.4 cup of water to boil the bean. Cut a spring onion and a half pepper (don’t matter if it’s red or green) fine. Add it to the kettle, add 1 tablespoon of vegeta and a pinch of chili. This should now be boiled slowly for about 2 hours (depends a little on how fast the beans cook).
At the end of the 2 hours, the soup should be thicker, set the heat to medium on the soup before you finely chop a spring onion, take a pan and add a little oil and put the onion for frying, it should only brown a little, then add a 1 tbsp of vegeta and 1 tbsp red pepper powder, stir it well then add everything in the soup. Let it boil in high heat for 5 min before turning it down, let it rest before serving.
Add more spices to what you feel it needs.
