Risotto with chicken fillet and broccoli

Risotto is not something I make very often, but it is incredibly good and I love to make it when I have a good time. Spend good time on the dish when you first make it.

I use about 1 hour and 30 minutes on this dish.

You need:

  • 200 gram/ 7.0 oz of risotto rice
  • 50 gram/1.7 oz sausage (cut into slices)
  • 1 half fresh broccoli
  • 2 spring onions
  • 6 deciliter/ 2.5 cup of water
  • Salt
  • Black pepper
  • 4 chicken fillet
  • Ajvar sauce (homemade, you can also buy ajvar in the store).

This is how you do it:

Before you start, set the oven to 220 ° C / 428 ° Fahrenheit

Start by heating olive oil in a good pot, add the onion and sausage and swirl it to make it shiny but not brown. Touch regularly. Pour in the rice and also swirl it until it becomes slightly transparent.

Add the power/water after you have “roasted” the rice a little. While the risotto cooks, you can cut the broccoli and put it in the pan while the risotto cooks. Add salt and black pepper to taste. Uses between 30-40min on the risotto.

Chicken: Add salt, pepper, pepper spices and a little oil. Put the foil in an oven mold and place the chicken file in the mold, place foil over and place the mold in the oven.

Ajvar sauce as an accessory next to the risotto and chicken when you serve.
